  3.                             Buying Frozen Fish

  5.                Freezing presents special problems to the astute fish 
  6.           buyer.  Freezing masks the signs of freshness, making it 
  7.           difficult to tell the age of the fish under consideration.  
  8.           There are many signs that indicate good quality however.  
  9.           First, the flesh should be solidly frozen, and there should 
  10.           be no signs of discoloration.  Be sure to look for freezer 
  11.           burn, which is indicated by a white dry appearance around 
  12.           the edges of the flesh, or by ice crystals.  Freezer burn 
  13.           indicates that moisture has been lost, possibly as a result 
  14.           of thawing or refreezing.  In addition, the fish should be 
  15.           wrapped in moisture-proof material with little or no 
  16.           air-space between the fish and wrapping.  There should be 
  17.           no odor.  Once a fish is frozen do not refreeze.
